You are lucky to have really fresh fish, it makes all the difference. I refuse to eat Supermarket fish, even if they have a proper fish counter, to me it all smells :x a piece of fish cooked same day from the sea has no smell when cooked Supermarket fish stinks as basically the flesh is breaking down after 24 hours even if chilled and ammonia is formed.
