Ah the fun of EM field pickup. One of the useful things i've discovered over the years is the usefulness of an input shorting RCA plug. Make em up, fill up all your unused inputs with these things. Oh and solder a wire to one of them and use it as an earth wire to experiment with.

Nice. There are technical reasons why the driver stage should be driven from a higher voltage than the output stage. Not sure they apply to a darlington output setup, i'd have to think, and my brain seems to be offline.

Many many moons ago i tried 2 different types of leather, one with a shiny side, one suede. I couldn't get excited about the one with a shiny side, up either way. The floppy suede one however is the second best option i found, and the best without a record clamp. All completely subjective of course.

For the input and output stages I now have a curved tinned wire going over the top of the board and connecting thd two caps. I do worry this is not optimal and that the bus bar between them should be as short as possible. You mostly see psu caps very close together with a short link between. Do you...

I have an app on my tablet called "Spectroid". No idea if it's available for apple devices. It'll tell you the intensity and frequency of anything you can hear (assuming of course your microphone isn't broken, either by design or happenstance).
