I was always partial to Black Pudding. These days I gain weight so easily, I only have such things as a rare treat. I'm even more partial to a good haggis though :D

There's only one recipe for black pudding

Buy it from Bury market and bring home
put into a pan of water and bring to boil
simmer for nine mins
remove to plate
slit open and eat with bread & butter

Blimey, never had it boiled. I like it sliced and fried so that the outside is almost burnt, but I haven't had it for ages. That might have to change soon. :)

I don't like the texture of eating it that way. Everywhere in Europe has blood sausage, especially Spain and they have a famous recipe but it uses beans, and I am not a bean person. I like the idea of casserole as the black pudding breaks down into the sauce and makes it very rich, which I like.

Interesting specialities from different parts of the country. Cockney specialities like Jellied Eels, Pie and Liquor, plus the Jewish specialities have caught on like Liver or Salt Beef Bagels.

Yep, lard is definitely the bizz. I have to make so with cooking it on a George Foreman to keep the calories down. The Grill that is, not the boxer
